EARLY SUMMER, wildflowers, including Basswood/Linden, Buttercup flowers (ranunculaceae)- Pale yellow, very sweet , mildy aromatic
SUMMER, wildflowers, including Milkweed (asclepias syriaca), White Clover (trifolium repens)- Sweet, mild spicy, light yellow
LATE SUMMER, wildflowers, including mostly White Clover, Smartweed (polygonum pennsylvanicum) of the buckwheat family- Smooth, flavorful, golden amber
FALL. Wildflowers, predominately Goldenrod (solidago), New York Aster (symphyotrichum novi-belgii)- Robust flavor, dark amber, likes to candy or crystallize
